Our History
Who we are
This might sound cheesy, but we are simply in love with cheese. Our love story began back in 1981, on a little family farm in the south of Spain. And as you might guess, it started with a block of cheese.
It was some time in early spring, and our cows had been exceptionally generous with the milk. So, we decided to turn some of it into cheese. Cheddar, to be exact.
And it was good. Really good.
So, we've been making cheese for over four decades now, and we hope to keep doing it for many years to come.
Meet Matías Ruiz
Matias is our Founder, Head Chef, Chief of Quality Assurance, or as we call him, Yayo (a very affectionate way of saying grandpa in Spanish).
An expert in all things cheese, he has a hand (quite literally) in every single piece of cheese we make.
It's his ceaseless insistence on keeping the best cheesemaking traditions alive that makes our product so special.
Why Con Queso
We're artisanal.
Our cheese is made by hand, in small batches. This means more authenticity, more attention to detail and more love in every ounce.
We're organic.
This makes our cheese superior in quality and higher in nutritional value. So, not only does it taste good, but it's also good for you.
We care.
Not just about our product and customers, but also about the planet. We're well aware that farming takes quite a toll on the environment, so we do everything we can to keep our impact low, from low-pressure irrigation to eco-packaging.
